About Laurie Gray, Our CEO & Founder
When Laurie was growing up in Tacoma, Washington, there was one toy her mom just couldn’t keep her away from: an Easy Bake Oven. She learned how to make the best flaky, buttery pie crust from scratch from her mom.
As Laurie grew up and became a successful executive, and had a family of her own, she never stopped baking. Her home was always filled with the delicious smells of spicy cinnamon and sweet sugar. After a long successful career as a marketing and non profit executive, and raising two children, she decided to follow her dream of opening a pie shop. What began as baking for friends and family out of her home kitchen in 2014 quickly grew to her first brick and mortar. The Pie Bar opened its doors on June 3, 2016 in Downtown Long Beach.
As Laurie says, “Pie is still one of the simple pleasures of life. It brings back memories of time spent with family and friends and is the ultimate comfort food. I wanted to create a place where you can come at the end of a long day to unwind with a friend over a piece of pie and a glass of wine. Or start your day with a savory breakfast pie and some hot coffee. Pie fixes everything! And when our customers are here, I want them to feel like they’re home. Because we consider them all family!”
Laurie plans to build on the success of her first store and open multiple locations across the country.
About Tony McKay, Partner
Long before there was The Pie Bar in Long Beach, there was a Kickstarter campaign to get it going. And when Laurie’s longtime friend Tony heard about her idea, he knew he wanted to help.
He invested in her dream, and their friendship, by becoming a partner in The Pie Bar. When he’s not baking up new strategies for The Pie Bar, he’s saving lives with the Seattle Fire Department, where he’s worked as a Firefighter/Paramedic for more than 20 years.

Stephanie DeVoll, Head Pastry Chef
Born and raised in Southern California, Stephanie spent every winter and summer break at her grandmothers house where she learned the art and patience of baking. She graduated from high school and went on to her local community college. Unhappy in the classroom she wondered what else was out there. Until one day her father mentioned the idea of attending culinary school. She took that idea and ran with it. Graduating from Le Cordon Bleu in 2010 she went on to intern and later work at The Pelican Hill Resort. Where she learned amazing technique and discipline from Pastry Chef Jean-Francois Lehuede. She met Laurie in late November 2015 while working for the commercial kitchen Laurie was renting space from. When Laurie needed help filling some orders for the holiday season Stephanie jumped at the chance. Since surviving that first holiday season together Stephanie has embraced all that is the art of making pie. If ever in the shop be sure to say hello she’s the one in the back dusted with flour, dancing, singing, and rolling dough with a smile on her face.
